Here we are whizzing again towards the end of the month! It has been a typical dark and dreary November week with rain, ice and snow although there are still some leaves clinging to the trees.
Monday was supposed to be our Day Camp Committee meeting but due to some last minute cancellations we were down to only 3 participants and so opted to report to each other via email this month. So I transferred the large pot of Sweet and Sour Cabbage Soup I had prepared into containers and froze them for supper at a future meeting 😊
Tuesday morning found me typing up my report on the previous month’s activities and continuing to respond to communities who are slowly beginning to contact us about dates for their 2020 Day Camps. I have also been refining bits and pieces of Program Manual content. That day my colleague Sophie, the Clerical Secretary of Synod joined me for lunch as we had postponed her visit from the past Tuesday due to freezing rain. Sophie got to meet Thomason (the main reason for her coming 😊)
Wednesday was the monthly CTM board meeting and so I prepped for that during the day, setting out refreshments and of course taking minutes of the proceedings.
The past couple of days, after typing up the minutes I worked on the Advent/Christmas edition of the CTM Newsletter. The Harvest issue was never published since our President had been unable to submit his “message” on time so this issue will be double-sized and include content from the unpublished one.
Tomorrow we will be saying goodbye to my boarder, Steven who has been living here for more than a year. I know that I shall really miss his companionship and I think Thomason is going to be very upset as Steven has been a member of our “pack” every since Thomason first came home last February. Steven is leaving slightly earlier than expected as he had originally planned to stay until his school courses ended in December but he has offered to go and help some close family friends in Halifax and so departs by train tomorrow afternoon.
There has not been much time for crafting this week, although I did completed one more pair of Newfoundland mittens, part of my Christmas gift stash 😊
During the coming week I shall be “Changing the Decorations” as Advent begins on Sunday December 1stthis year. So watch next week for the “reveal”😊
Before I begin my Saturday baking prep I’ll just close off with a recipe.
With the colder weather I have been using my slow-cookers almost every day and one evening this week we enjoyed Chicken Enchiladas for dinner.

1 pound boneless chicken thighs
1 large onion, diced
1 green pepper, diced
2 cups diced canned tomatoes
2 cups each black beans and pinto beans
1 cup corn kernels
1 cup shredded carrots
2 tsps. Chipotle powder
¼ tsp. black pepper
1 tsp. cumin
2 cups grated cheddar
7 large (8”) flour tortillas
In a large sauté pan cook the chicken, onion and green pepper for approx. 15 minutes or until the chicken is no longer pink and the vegetables have softened and browned. Shred the chicken into bite sized pieces. Stir in the beans, vegetables and spices.
In a slow cooker layer 1 cup of filling, 1 tortilla, and 1/3 cup cheese. Continue layering until all ingredients are used.
Cook on Low setting for 6 hours.
